Blueberry Corn Muffins Recipe


These muffins are great for breakfast.  They are quick and easy to bake because the recipe uses Jiffy Corn Muffin Mix. We don't normally like muffin mix from the box but Jiffy Corn Muffin Mix is the exception and we think it's the best muffin mix from the box and it makes really delicious corn muffins.  We packed a few this morning along with a thermal of coffee for our commute to work.  These are tasty carry-along breakfast alternatives to our beloved blueberry pancakes when we don't have time for a sit down breakfast at home. They can be stored in muffin boxes or containers for up to 3 days and when warmed up in microwave for 12-15 seconds, they taste and smell like freshly baked.  Warm or cold, these muffins taste great. Peanut Butter and Jelly Omelet


We were at first skeptical about this recipe.  But we woke up this morning and saw a couple really ripe bananas sadly sitting on our kitchen counter.  We didn't feel like another morning with banana shakes. We happened to have no breakfast meat in our fridge or otherwise we would have made the traditional omelet instead.  Desperate to use the last two bananas before they really rot, we gave this recipe a try.  Surprisingly, it turned out to be quite good.  Just remember to not pour all the egg batter in one setting. The eggs in the recipe can make 2 - 3 omelets. The omelet should be thin and the peanut butter and jelly should be spread warm on the omelet.  We highly recommend skipping the pepper in the egg. DO NOT ADD THE PEPPER. The warm peanut butter, jelly and the banana in a thin omelet taste very similar to banana crepes. It's a good alternative for those times when we run out of time and we are too lazy to make batter for the crepes. (Click here for the recipe.)

Buttery Apple Biscuits

Today, we made biscuits from scratch for the very first time. Long time ago, we tried making biscuits from the canned dough but they were too salty for us and therefore we came to the wrong conclusion that we didn't like biscuits after all. But these Apple Biscuits we made this morning totally converted us into the new fans of biscuits.  They are so delicious and so easy to make. We just can't have enough of them.

Blueberries Pancakes

These pancakes are simply delicious. We love them and our co-workers love them when we brought them to work... Ditch the pancake mix from the grocery stores. Apple Raisin Oven Pancake


I am now having this as breakfast while typing this post. The dish looks great and the ingredients are easy to gather. The reason I made this breakfast this morning is because I have a leftover apple and raisins from last time when I was cooking Rachael Ray's All American Pork Chop Dinner. Thank god, I finally used up all the leftover ingredients from that recipe. Now my fridge is empty and clean (I prefer my fridge to be empty and clean cause that means I can once again eat out at my favorite restaurants which I won't do as long as I have food items in my fridge. It's just my routine...)

As for the taste of this breakfast dish, I'm just not too crazy about it. The texture isn't the same like "Pancakes" , it's more like a "quiche and very dense custard combo in between". Since I'm not into quiche, I'm not too crazy about this dish. It also is not sweet enough for me. I would like it to be sweeter without me sprinkling powder sugar constantly while eating. The dish doesn't tastes bad, it definitely smells good but it's just that I would like it to have a texture that is like a typical pancake.
